Pork Stroganoff and Acorn squash

Pork Stroganoff

        Beef stroganoff is pretty tasty so why not use pork instead (we like pork).
        This is something so easy, quick and tasty.

        Leftover pork roast from last night so a Pork stroganoff with egg noodles and an acorn squash cooked in the microwave.  For the squash a little butter and brown sugar, cover and nuke for about 10 minutes until tender.

         Now the pork stroganoff was easy, just fried up some fresh mushrooms, onions and garlic in a pot. Set aside and made up a tiny bit of instant mushroom gravy, add the leftover pork chopped in 1 inch pieces, to heat up, put the onions and mushrooms back in the pot and a few tablespoons of sour cream just before serving over fresh cooked broad egg noodles, sprinkle a little parsley over, add our squash and a nice fresh cheese bun.

         Any variations work pretty good, but we like this one.
