Rolled ribs

Rolled Pork Ribs with sage stuffing

Another favourite of ours that were a real hit in my Restaurant.

Here is all you do:

Pork centre cut ribs nice for rolling.

Cut in half about 6-7 ribs each

Make a dressing with chopped up bread slices, 3 slices for two portions.
This time I made 4 used plain croutons hydrated in water to soften them up a bit.

Add chopped onion, and celery,

Sage spice to taste, tsp or so garlic powder, tsp or so, salt pepper and dry mustard.

I add a bit of water to moisten and blend everything together.

Roll ribs and tie with butcher string to hold them together.

          Then I put them in a pan with a bit of water and sauerkraut on the bottom, cover tightly with foil and roast about and hour or so until tender. Think about two hours on the grill would be more tender.
           This is the first time I did them on the Weber Q, probably should have been done 30 to 60 minutes longer to be fall off the bone. I have always done them in the oven before. Still tasty and good, but need to be fall off the bone.
           Second time on the Q cooked on low for about 3 hours, fall off the bone tender= perfect !

           Oh so tasty enjoy.
