First I fire up the Weber on Hi to preheat 10 to 15 minutes, it needs to be real hot.
While waiting for the grill to preheat prepare your chicken.
Start with a a fresh or thawed out chicken, and I trim any excess fat and remove giblets, rinse with cold water and pat dry.
Then a light coating of oil all over, I use Olive Oil Pam spray.
Season with I sprinkle with Montreal chicken spice or whatever you like.
After 10 minutes or so the grill is now smokin' hot, turn it down to medium low and set chicken breast side up directly on the grill, I also add foil wrapped potatoes at this time too. Close the lid. If you have a temperature gauge on the lid about 300-350 f.

Let rest for a couple minutes then I just chop it into quarters. Enjoy !
You can also do chicken pieces the same way, only a little less cook time.
