Left over Meat Pie

Left over Meat Pie

       This is an easy recipe I put together the other night with a left over pot roast and potatoes we did in our slow cooker the other day.
      There is a lot of variations but it is an easy tasty meal. A great the second time around too.

Ingredients

Two frozen pie shells
Left over beef pot roast diced
Left over cooked potatoes diced
Left over gravy from roast
Chopped onion
A hand full or two of frozen mixed veggies
garlic to taste
Salt Pepper to taste

Process

Thaw frozen pie shells about 15 minutes. ( Or you can make you own if you wish)
Put one in preheated oven at 350 after piercing bottom with a fork, about 20 minutes until slightly brown.
Let cool a few minutes
While this is happening saute onions and garlic in a sauce pan, a few minutes, add the meat, and potatoes, and frozen veggies for a few minutes and then enough gravy to make it moist but not runny, slat and pepper to taste.
Now pour this mixture into pie crust, put second crust over the top, crimp the edges with a fork and cut slits in top.
Back in oven 20 minutes or so until the crust is golden brown.

Serve with a salad and enjoy.

  1. Sure makes my mouth water. Why is it that when I'm famished I always come across good looking food...in a picture? Makes ya wonder.
