Hamburger Stew

Hamburger Stew

     A cold December day here at the Walmart parking lot in Midland Texas and felt like making a simple stew, perfect for a cold wintery day and we will have lots of leftovers.
     This is my recipe today, but off course you can add our subtract whatever you like.
We added some shredded cheese in top

 Ingredients:

1 lb lean ground Beef
1 14.5 oz can Diced Tomatoes ( no salt added) I used Basil, Garlic and Oregeno
1 14.5 oz can Low Sodium Beet broth
3 celery stick chopped,
2 carrots chopped
1 onion diced
2 cloves garlic chopped
4  medium potatoes peeled and about 3/4 in cubes
8 oz fresh sliced mushrooms
1/2 cup instant rice

Process:

Brown the meat in a large pot and saute the onions and garlic with it at the same time.
When onions are translucent add the fresh mushrooms, celery and carrots for a few minutes stir.
Next the can of beef broth and diced tomatoes.
Simmer for a few more minutes then add the potatoes stirring everything together.
Then simmer  for 30-40 minutes so liquid reduces, add spices to taste, I do it different every time.
Then for the last 20 minutes I added 1/2 cup of instant rice.

Then serve with fresh french garlic bread our whatever turns you on.
