Ingredients:1 lb lean ground Beef
1 14.5 oz can Diced Tomatoes ( no salt added) I used Basil, Garlic and Oregeno
1 14.5 oz can Low Sodium Beet broth
3 celery stick chopped,
2 carrots chopped
1 onion diced
2 cloves garlic chopped
4 medium potatoes peeled and about 3/4 in cubes
8 oz fresh sliced mushrooms
1/2 cup instant rice
Process:Brown the meat in a large pot and saute the onions and garlic with it at the same time.
When onions are translucent add the fresh mushrooms, celery and carrots for a few minutes stir.
Next the can of beef broth and diced tomatoes.
Simmer for a few more minutes then add the potatoes stirring everything together.
Then simmer for 30-40 minutes so liquid reduces, add spices to taste, I do it different every time.
Then for the last 20 minutes I added 1/2 cup of instant rice.
Then serve with fresh french garlic bread our whatever turns you on.
