Spaghetti Squash Lasagne

Spaghetti Squash Lasagne

        We like spaghetti squash and we like lasagne so why no make it all in one. So easy to do. Start with a a spaghetti squash and had some pasta sauce I had in our freezer.
        Cut the squash in half like so below. And  scoop out the seeds.
        Then I put on a plate with a tablespoon of water, cover and in microwave for 10-12 minutes until tender.
                  When cooked scoop out the "spaghetti" onto a plate. "Careful its very hot"
         Then layer sauce, "noodles" sautéed mushrooms, onions, pepper's, or what ever you like, parmesan, mozzarella cheese in the squash shells.
ready for the oven
           Preheat oven to 400f until heated through and cheese is melted about 20-30 minutes or so.
sprinkle a little parsley or green onion on top
 and we have individual bowls of lasagne
          Very tasty, gluten free and we will do it again.
Yes we will have leftovers too.
