George's Waldorf Turkey Salad

George's Waldorf Turkey Salad

 A great way to enjoy some leftover turkey. This is my version of various recipes I found on line using the ingredients we had on hand. Makes for a great side dish or a meal.

Ingredients:

2tbsp light mayonnaise                                                2 cups cooked cubed turkey
2 tbsp low fat Greek yogurt                                         3/4 cup dried cranberries
1 tbsp balsamic vinegar                                               1 apple cored and chopped, (toss with
1 tbsp white vinegar                                                           lemon juice to keep from browning)
1 tbsp white sugar                                                        1/2 cup chopped celery
1 tsp curry powder                                                       1/2 cup chopped red onion
1/2 tsp ground black pepper                                        1/2 cup chopped pecans
3 tbsp grated parmesan cheese

Directions:

Whisk mayonnaise, parmesan cheese, vinegars, sugar, curry powder, and black pepper together in a bowl until smooth. Lightly toss turkey meat, cranberries, apple, celery, red onion, and pecans in a salad bowl; pour dressing over salad and toss again to coat. Chill at least 1 hour (or overnight for best flavor).
