Tuna Melt

Tuna Melt

Was very tasty


3 tbsp  finely chopped red onion
2 cups packed baby spinach leaves, chopped
a few tbsp  Light Mayonnaise Type dressing

1/4 cup finely chopped celery
1/4 cup finely chopped/shredded carrots
1 can  solid white tuna in water, drained
1/8 tsp  freshly ground black pepper
2  Weight Watcher's Multigrain Thin rolls
2/3 cup  Light  Cheddar Shredded Cheese or your preference


Preheat oven to 425°F (220°C). Line a baking sheet with foil.
In bowl, combine red onion, spinach, mayonnaise, tuna and pepper. Use a fork to mash mixture until mayonnaise is evenly distributed.
Place toasted bun halves on baking sheet. Divide tuna mixture among bun halves. Top evenly with cheese. Bake in centre of oven for 5 minutes or until cheese is melted. Turn broiler to High and broil for 2 to 3 minutes or until cheese is bubbling and starting to brown. Serve with a salad, if desired.
