Foil pack Fish Florentine for Two
         I was searching for a new fish recipe and came across this one. So whipped it up with 2- 4oz Cod fish fillets and really enjoyed it.
        Came from the Kraft website and I did not alter it at all. Now thats unusual for me. Most recipes are ideas, but I ran outta time today and just did it like below. Very tasty, nutritious and heart healthy. Not sure if I would change it much, worked good just the way it was.
        The nice thing about this we can do it on our Weber Q grill or in the oven. And no messy cleanup.

Foil-Pack Fish Florentine for Two

What you need


PHOTOS: 1 Add your photo
2/3 cup instant brown rice, uncooked
1 cup warm water
1 halibut fillet (1/2 lb./225 g), cut crosswise in half
2 cups baby spinach leaves, coarsely chopped
2 Tbsp.
Kraft Calorie-Wise Sun-Dried Tomato & Oregano Dressing 1 Tbsp. Kraft 100% Parmesan Light Grated Cheese

Make It

Heat oven to 375oF.
Spoon 1/3 cup rice onto centre of each of 2 large sheets heavy-duty foil. Fold up all sides of foil slightly to form rim. Pour 1/2 cup water over each mound of rice; top each with 1 fish piece. Surround with spinach; drizzle with dressing.
Bring up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside. Place packets in single layer in shallow pan.
Bake 15 min. or until fish flakes easily with fork. Cut slits in foil with sharp knife to release steam before opening packet. Top with cheese.
