At the St. Jacobs farmer's market today and picked up some field fresh med beefsteak tomatoes and a nice seedless cucumber, so a salad was in the works for these items. Quick easy and refreshing.
2 medium fresh beefsteak tomatoes
1 teaspoon sea salt (or to taste)
1/4 red onion sliced and chopped
1 teaspoon pepper (or to taste)
1 teaspoon garlic powder (or to taste))
2 tablespoons olive oil (or to taste)
2-4 tablespoons balsamic vinegar (or to taste)
Cut the tomatoes, onion and cucumbers into small pieces; place in bowl, add all remaining ingredients and stir.
Refrigerate for an hour while all flavors come together. Add more of above ingredients to suit your taste if needed.
Very tasty and a nice change.
