Venison avocado burger.

        I was given a pound of ground Venison (yep thats deer) from good friends Norm and Pat, couple of campers we know, while in Buckhorn. Norm has been a long time hunter, and have Venison and Moose meat in their freezer. Its been a long time since I had venison and is a nice tasty treat.
         So what to do with it? Think I will whip up some burgers, very similar to my Chicken Avocado burgers.
Here is what I did.

Ingredients:

1 Lb ground lean ground venison.
1 ripe avocado (cut into small chunks)
1 tsp roasted garlic puree
Juice from one fresh lime
1/4 cup finely chopped onion
3 strips of bacon partially cooked and finely chopped.
And I used some salt free pork spice, or you can used salt and pepper.
2 tbls olive oil
a few dashes of Worcestershire sauce

Venison is extremely lean so a bit of bacon or pork is recommended to keep it from drying out and cover the gamey taste it may have.

Instructions:

Add ingredients to a large bowl and toss gently.
Shape into desired sized patties and grill.

        I do not add any egg or filler, just slide very gently on the preheated grill (on med low heat) and turn once only, about 6-8 minutes per side as juices come to the top (A bit longer if frozen), they will not stick if done right. Until internal temp is 160 f.

The end result was amazing! Very lean tasty burgers and no gamey taste either that I would have expected considering where they were hunted in the bush  a few hours north of here in Ontario.
