Pig Tails

        BBQ Pigtails are a local favourite in the Kitchener Waterloo area. Not sure os the origin of them but when done properly they are so very tasty, sweet and tender. But are a real delicacy in the Kitchener are here and many recipes can be found on the internet. Here is a link to one. similar to how I will make them this time.
         I have done them many way for many years and were another favorite that I served occasionally in my restaurant. They are kinda ugly looking, but if you can get past the look if them and enjoy the tasty fat from a pig go for it. I have not had them for a long time because of my high cholesterol, but moderation right?
          I have done them many different ways but the end result is almost he same. Today these will be done completely in the oven. Its cool outside and running the oven for a few hours will keep our Rv toasty warm.
       

Ingredients :

4 pig tails.
1-2 cups BBQ sauce
 2-3 tbs brown sugar
garlic power to taste tsp or so
 1 tsp dry mustard
1/4 cup cider vinegar
1 tsp Worcestershire sauce 

Directions:

Preheat oven 300f
Place pig tails on a rack in an open roast pan
Roast for at least 2 hours 

In the meantime prepare your BBQ sauce

Drain the fat.
Place the pigtails on the bottom of the roast pan
Spoon over some of the sauce.
Return to the oven and cook for another hour.
adding more sauce over the top as required.

After trying these different ways I like them better precooked in the pressure cooker about 20 minutes then in to oven for an hour with the BBQ sauce, they are actually more tender that way.
