Garlic Shrimp Pasta

ingredients ready to saute

Ingredients for 2 people.

1/2 lb large shrimp peeled and deveined, tails remove, cut in half if very large
 Olive oil
 1 tbls  butter
 3 tsp Garlic paste or 3 gloves or to taste we like lotsa garlic
1/3 chopped onion
1/2 cup tomato chopped coarsely
1/2 cup broccoli chopped coarsely
3/4 lb fresh mushrooms thick slices
salt and pepper to taste
pasta enough for 2, I used spaghettini
large pot of water for pasta


Saute the shrimp, mushrooms, tomato, onion and broccoli in olive oil for a couple minutes until shrimp turn pink while pasta is cooking.
Set shrimp aside and drain pasta when ready, to your liking,  reserving a bit of the water.
Heat up on high a tbls or so of oil, butter and garlic,
Return shrimp mixture to the the pan to heat through for a minute or two, add the pasta and parsley  toss for another minute or two until heated through. If it seems a bit dry add a splash of the reserved pasta water.
Serve immediately with a salad of your choice.
