This is so easy and healthy especially when the tomatoes are is season. Very quick , but to make and even better sauce lots more ingredients and much longer cooking time, but for now this worked wonderful,
Ingredients : For 2 people2 cups diced tomatoes
1 can tomato paste
1 cup chopped onion
1/2 stalk chopped celery
1/2 carrot chopped fine
couple fresh msuhrooms to taste sliced
Italian spice taste
Couple cloves of chopped garlic to taste
2-3 teaspoons sugar to taste
Left over cooked turkey chopped up or pulled, or your choice of meat.
Directions:Saute' mushrooms, onion, garlic, celery and carrots in olive oil for a few minutes.
Add diced fresh tomatoes, add tomato paste and cooked meat. I added leftover turkey chopped up a cup or so
Then sugar to taste as well as salt and pepper even a bit of water or broth if needed. Simmer for 10-15 minutes and done.
Serve over your choice of pasta , we prefer spaghetti squash when we can get it
