Turkey Bolognese

Another great way to use up some of our leftover Turkey
a quick and easy meal portion for 2.
sure was tasty
everything ready to saute'


  • 2 tb olive oil
  • 1/2 medium onion, chopped
  • 3/4 fresh mushrooms chopped
  • 3 garlic cloves, minced
  • 1 carrot, peeled and finely chopped
  • 1 celery stalk, finely chopped
  • 1 cup chopped or shredded cooked turkey
  • 2-3 cups pasta sauce
  • salt and freshly ground black pepper
  • 2 servings spaghetinni 
  • Parsley
  • Parmesan Cheese


In a large pot add the oil, onion, celery, carrots, garlic, and mushrooms, simmer  until tender.
Add the turkey and stir for a few minutes.
Then the pasta sauce until heated through, turn to low and cover let simmer for 15 minutes while you cook the pasta.
Once the pasta is cooked drain saving a bit of water.  Add to the sauce and toss adding a bit of reserved water if necessary.
Serve with Parmesan cheese and enjoy.
I added a garlic cheese bun.
