We were chatting a while ago about different ways to cook spaghetti squash, And Suzie and I thought , maybe pizza style. Why not we have the ingredients and like pizza.
While shopping this morning I picked up a nice sized one for the 2 of us and this afternoon. put it together.
|all dressed and ready to wrap|
|45 minutes and fork tender|
|tasty yup it sure was|
- Spaghetti squash cut in half lengthwise, and stoup out the seeds
- Pepperoni (we like Turkey Pepperoni)
- Chopped Onion
- Chopped Fresh mushrooms
- Pizza sauce
- Shredded mozzarella
With the squash cut in half I added a bit of mozzarella, pizza sauce, onion, mushrooms, a bit more sauce and more cheese on top, I added some chopped olives on mine.
Wrap up in foil set on reheated Weber Q about 45 minutes until fork tender.
I am sure you could do it in the oven as well
Un wrap, set on plates and dig in, we scooped it all on to our plates with a spoon and enjoy it very much. smells like pizza tasty like pizza filling with only a spaghettis like non crust.
And I made some cornmeal muffins for the side , just because I could.
We will definitely do this again.
