Start with your chicken breast side down and with kitchen shears, from the bottom opening of the bird cut up each side of the back bone and remove it. You can discard it or cook it and save for soup stock.

Now turn over for about 20 minutes until the thickest part reads 165F with an instant read thermometer.
Let rest for a few minutes then cut up into serving pieces , enjoy !
