Spatchcock (flattened) Chicken

     Another great way to cook a whole chicken in about 1/2 the time that leaves it most and the skin crispy.
      Start with your chicken breast side down and with kitchen shears, from the bottom opening of the bird cut up each side of the back bone and remove it. You can discard it or cook it and save for soup stock.

          Turn  the bird over breast side up and press down until you flatten it you will hear some bones cracking.

this is a 5 kb chicken flattened
       Rub with oil and spices and set on a preheated grill turn to medium low, Skin side up  close lid for about 20 minutes. This will render some of the fat away. and keep the meat moist. I used my grill mat this time, keeps the grill clean.
      Now turn over for about 20 minutes until the thickest part reads 165F with an instant read thermometer.

           I cooked this chicken in about 40 minutes compared to about 90 minutes, moist with crispy skin.  
           Let rest for a few minutes then cut up into serving pieces , enjoy !

  2. I notice that sometimes you cook on the grill mat and sometimes not. Why? Also, where did you buy yours? I’ve tried finding one at my local WalMart As Seen On TV isle but have had no luck. Suggestions?

    1. I try the grill mat with different items, it keeps the grill very clean.
